John's pecan pie making history is fraught with trial and a lot of error. For whatever reason something
always seems to happen. One year he accidentally doubled the amount of pecans, making the pie taste woody. The guests were polite and didn't say a thing. Then there was the year he used the pecans he found in the freezer from the year before. Nobody said a thing though the pie had a funky freezer burnt taste. Of course the thing about pecan pie is that you don't make it for yourself, it's something you make for an
occassion such as a Thanksgiving or Christmas gathering. It's assumed that people will be there. This year at Christmas John scorched the top of the pecan
pie, trying to bake it following the pumpkin pie instructions. It tasted okay and everyone was polite, never having tasted it before. When we got invited to friends' house for New Year's John knew right away what he'd fix: Pecan Pie! Man...take a hint. Preparation was well and good til he looked up and saw the melted margarine on the counter but the pie was already in the oven baking. OI! We think he rescued it in time. All we can hope for now is don't drop the pie, don't drop the pie. : )

John comes by it honestly. Mom had a couple of favorite recipes - toasted coconut cake and lemon merangue pie. Any family members reading will agree, when it came out right it was fantastic. That only happened about 30% of the time. One of mom's tribulations was when she made lemon merangue pie for a church dinner and it came out perfectly. She was pleased and proud that is came out perfectly browned with nice "peaks" from the egg whites. As it was cooling, brother Dave walked by and decided to eat the peaks. I don't think I ever saw her that mad at Dave.
The toasted coconut cake has to go under the broiler for just a couple of minutes for light toasting. It burned almost everytime. Mom was a great cook but it was a busy household and hovering over the oven was seldom an option.
JWE loved making pecan pie. He seemed to have it down. However, he always used storebought crust. ick. Folks always managed to eat it...

I give you credit for even attempting to MAKE a pie....I just buy mine at Perkins.....
I've never made a pecan pie ... all those nuts kind of scare me. I think I've got enough of that in my life as is.
